What We're Eating This Week...


I picked up some zucchini and yellow squash Sunday and I cooked a big batch Sunday evening.  David has eaten it multiple times and once as a side with a peanut butter/jelly sandwich.  Kambree has been wanting to try dragon fruit, I mean she has talked obsessively about it for a while.  So, she and I headed out Sunday afternoon and found some.  I didn't really care for the texture of the dragon fruit but I wasn't about to tell her that because she really liked it.

She also wanted to try rambutan but there wasn't any at the store we were at.

What I'm Reminiscing About...

I have been thinking a lot about when Kambree was little.  She talked and used big words often and she would refer to anything that was in the past as "lasternight".  I remember thinking that it was the cutest thing ever and that I would stop anyone that tried to tell her that "lasternight" wasn't a word.  I guess she figured it out on her own because now she uses boring words like yesterday and the other day.

What I'm Loving...

I'm listening to the audio version of The Great Alone by Kristin Hannah and I am loving it.  I thought that I should broaden my listening from podcasts a bit.

What We've Been Up To...

We have had such nice weather that we have enjoyed being outside a good bit.  I have enjoyed going through some stuff that was cluttering my laundry room and making that room feel less crowded.  Not too much going on!

What I'm Dreading...

I'm not really dreading anything but I do have a work project that seems kind of daunting.  Just something new to learn that I'm not fully confident in yet. 

What I'm Working On...

I'm working on finishing up my laundry room and my closet.  I'm also still working on the meal planning that I really need to get figured out.  I have a grocery order in the works too.  

What I'm Excited About...

I have a women's retreat with some of my long time friends at the end of March and I'm excited about that.  I'm also excited about a little cold snap that we have coming up - I know, how can I be excited about that.  It just feel like it gives us permission to slow down.  


What I'm Watching

On Sunday I finished all the seasons of When Calls The Heart on Nefflix and a new season started on the Hallmark channel on Sunday evening.  I completely enjoyed this show.  Have you watched it?  I don't know why it took me so long to watch it.  I would see it in my feed and I finally decided to give it a try.  It checked so many boxes for me.  I described it as grown up Little House on the Prairie.

What I'm Listening To...

In addition to the book that I mentioned above I have been listening to a few podcasts.  Recently I thought this episode of The Popcast was hilarious.  It's about the Nos of Marriage.  Jamie and Knox can be a lot so it's not for everyone but I enjoyed this one.  

What I'm Wearing...

I'm including this topic because it's in the link-up but y'all there is nothing to talk about here.  Right now I have on a black top with a denim shirt over it and some distressed jeans.  Boring!  I do need a jean refresh as my favorite pair is absolutely worn out.  

What I'm Doing This Weekend...

I'm picking up a grocery order and doing some meal prep.  We are having our church birthday or anniversary celebration after service on Sunday and I am making some potato salad.  I think the weather is going to take a turn for bad and hopefully I'll finish up some de-cluttering.  

What I'm Looking Forward to Next Month...

I have a day outing planned with some friends to visit Texas-Tulips  and there's the retreat at  the end of the month.  Kambree has Spring Break and I'll be off a couple of days then too.  

What Else Is New...

I'm hoping to get Kambree signed up for soccer or some other sport.  We'll see how that goes - she wants to take hip-hop dance but we aren't loving that idea right now.  

What's My Family's Favorite Board Game...

We don't have a favorite board game but our favorite way to pass time is I Spy.  Kambree will fill every minute with I Spy.  We enjoy Yahtzee but Kambree doesn't love it yet.

What's Up Wednesday


 

Hello Friends!  Happy Wednesday!  Here's a look at what we have had going on this week.

Kambree has had a very loose front tooth for a while.  It was pretty clear on Sunday that the tooth was almost ready to go.  Kambree was at her Grandma's Monday and Grandma text me that Kambree wanted us to take her to the dentist to get her tooth pulled.  I gotta give it to Kambree, if I can pay someone to do something to save me time and energy - well sign me up!  

Last August Kambree had two bottom teeth that were refusing to come out and the new teeth were just about all the way in.  So, we had to have those two bottom front teeth pulled.

Grandma let me know that Kambree was really working on getting her tooth out.  At one point in the day they sent me this picture.

And I died laughing and I am still cracking up at this picture.  We have always enjoyed the movie Nanny McPhee and Kambree was living her best Nanny McPhee life.

A few hours later my phone rang and a very excited Kambree let me know that her tooth came out while she was eating a donut!  To think of all the time she wasted biting into an apple!!

I was so excited to hear this news and I told her that I could hear the wind moving in the area where her tooth was.  Kambree Face-timed me and she was so excited.  

Kambree saved her tooth for the "Tooth Fairy" to come when she got home.  This morning there was $2 under her pillow (our tooth fairiy rate for front teeth) and Kambree was so furious that "she" really took her tooth because she wanted to take it to school to show her teacher.  

So, that's a glimpse at what we have had going on.  Kambree was out of school and with her Grandma two days and we're all back together.  I have cooked exactly zero times this week but tonight looks promising.

Forever Mom



Welcome, friends!  We had a good weekend and Kambree has two more days off school.  We are so blessed to have a Grandma that gives so generously of her time to Kambree and we don't have to worry about child care on school break days. 

Sunday afternoon I was watching Kambree ride her bike.  I was enjoying her beauty, her excitement, and her joy as I was watching her.  She asked me if I was proud of her for riding her bike so fast and I told her that I was a hundred proud of her.  She told me that it didn't make sense that I was a hundred proud of her but she sure enjoyed hearing how proud I was.

I was admiring how her hair looks so naturally beautiful.  Without any effort her hair does this beautiful beach wave curl.  I can't take any credit for her perfectly curly hair.  She gets that from her first Momma.  


Even though I didn't create this beauty, I get to nurture it.  I get the day to day task of reminding her to brush her hair.  I remind her that while she's in the tub playing she also needs to actually use shampoo and conditioner AND wash her body too.  

I have the responsibility of modeling modesty for her and encouraging her to do the same.  


I walked into the Valentine's Party at school last week and several kids announced my arrival to Kambree.  "Kambree, your Mom is here".  One of the boys commented as I walk in that me and Kambree don't look the same.  I asked him if it was because my skin is the same as his and he said that me and Kambree don't match and about that time Kambree runs over and jumps in my arms.  He said, "but I guess you really are her Mom".  


Kambree has a spunk about her that I feel other kids are drawn to.  She has an enthusiasm that is contagious.  




I'm not this girls "first Mom" and I am not even her "second Mom" but I do get to be her "Forever Mom".  I think we match pretty well. 









Friday Favorites - February 8, 2019




Happy Friday, Friends!

What a long week it's been!  Let's jump right into a few favorites from this week.

One

First off is Kambree learning how to ride her bike without training wheels.  She has talked about this for a while now and she finally did it.  This has made me smile all week long.  


Two 

On Tuesday night our Keno group started up for the year.  I don't have any pictures but just know it's a great time.  My friend, Linda, is in our group and I haven't seen her in weeks.  We had a great time and I came home with two fun prizes too.  

 Three

The 100th Day of School was celebrated this week.  I just wanna know how it's not the 325th day of school!  It feels like it's been so long!  I really stressed about this day because last year I made a shirt with 100 smiley face buttons glued on it and I just couldn't pull that off this year.  I think we nailed it!  Kambree makes the cutest 100yr old lady.  





Four

Girl Scout Cookie time is here!  Kambree really likes the Thin Mint but give me and David all the Samoas.  They are so darn good.  A couple of Samoas make a bad day feel good.

 Five

I made Mississippi Chicken Thighs in the crockpot last Sunday and they were so delicious.  This isn't a health food at all but it is a delicious food.  We at the chicken with a baked potato one night and we made tacos out of it the next night.  Here is the recipe from Recipes That Crock  

Mississippi Chicken Thighs

Ingredients:
3 lbs Boneless Skinless Chicken Thighs
1 envelope Ranch Dressing Mix
1 envelope Au Jus Gravy Mix or Brown Gravy Mix
1/2 Stick of Butter
6 Pepperoncinis

1. Lay chicken thighs in the bottom of your slow cooker.
2. Sprinkle mixes on top.
3. Slice butter and place evenly on top.
4. Add peppers.

5. Cook on low for 4-5 hours.

When I made it this time I couldn't find the original recipe so I improvised.  Y'all, I put an entire stick of butter on top of the chicken and I left out the pepperoncinis and we weren't mad about anything.  It was delicious!  This was not boring chicken.
